In the hills, salt was never just salt. It was ground on the silbatta, the flat stone and its rolling pestle, with garlic, ginger, green herbs, choru, whatever the season and the kitchen knew. Pisse lun, pounded salt: the taste that tells a pahadi they are home.
Namakwali, born in 2018 in the foothills of Uttarakhand, is women from across the region sitting back down at the stone. The recipes are ancestral; the grinding is still done the slow way; the salt still carries the coarse, uneven warmth that no machine blend manages.
A packet of it does what a photograph cannot: it puts the mountains directly on the tongue.
